Kohinoor Old Delhi Nihari Sauce - an aromatic, slow-cooked recipe with a melange of exotic spices.

This aromatic recipe dates back to the reign of the Mughal Emperors. Its name is derived from the Arabic word 'Nahar', meaning 'day break' - the time at which the dish was traditionally eaten, having been slow-cooked overnight..
Nihari Lamb Curry:

• Stir fry 400g diced, boneless lamb in 1tbsp oil until lightly brown. Add 500ml water and cook until the lamb is tender (25-30 mins) and the water has evaporated.

• Add the Old Delhi Nihari Sauce and stir thoroughly.

• Cover and simmer for another 10 mins or until the sauce thickens to your desired consistency.

• Garnish with freshly chopped coriander leaves, ginger juliennes, chopped green chilli and lemon juice and serve with naan bread or basmati rice.

Alternative Suggestions: Replace the lamb with 500g paneer or mixed vegetables.
