Nutty Loaf as the name states is a crunchy combination of toasted Almonds with Sesame seeds and Rice. This delicious roast can be served with some Onion and mushroom sauce or choice of your fresh Vegetables.

Ingredients:

Olive Oil - 2 tbsp
 
 Onions finely chopped - 1
 
 Risotto Rice - 225g
 
 Vegetable Stock - 300ml
 
 Carrot grated - 1
 
 Leek finely chopped - 1
 
 Sesame seeds toasted - 2 tsp
 
 Almonds chopped and toasted - 85g
 
 Ground Almonds - 55g
 
 Cheddar Cheese grated - 85g
 
 Eggs beaten - 2
 
 Mixed herbs - 1 tsp
 
 Butter for greasing
 
 Salt to taste
 
 Pepper Powder for garnishing
 
 For the Sauce
 
 Butter - 2 tbsp
 
 Onion finely chopped - 1
 
 Mushrooms finely chopped - 100g
 
 Plain Flour - 4 tbsp
 
 Vegetable Stock - 300ml
 

Method:

• Heat Oil in a large pan.

• Add the Onions and fry for about 2 minutes.

• Then add the Rice and cook gently for 5 minutes stirring continuously.

• Next add the Stock, bring this to boil and then reduce the heat and further cook for about 15 minutes or until Rice is done.

• Now transfer this to another large bowl, add the Carrot, Leek, Sesame Seeds, Almonds, Cheese, Eggs, Herbs and mix well.

• Season with Salt and Pepper to taste.

• Transfer this mixture into a greased Loaf tin. Bake in a pre heated Oven to 180 deg centigrade for 1 hour until firm and set. After that leave this in the tin for 10 minutes.

• To make the Sauce, melt the Butter in a pan and cook the Onions till golden brown in colour.

• Add the Mushrooms and cook for another 2 minutes.

• Stir in the Flour, cook gently for 1 minute.

• Then gradually add the Stock, bring this to boil stirring continuously until thickened and nicely blended.

• Add some Salt and Pepper.

• Turn out the Nut roast, slice and serve accompanied with some Onion - Mushroom Sauce.
