|Potato Salad (Indian Style). Great with Cold Meats and absolutely a must for any BBQ!|
350g cooked new potatoes
| ||200ml Low fat creme fraiche|| |
| ||2-3 tsp Mr Huda's Mint and Tamarind Dip|| |
| ||3 tsp sugar (or to taste)|| |
| ||2 tbsp raisins (optional)|| |
| ||2 tsp of finely chopped red onion or spring onion.|| |
1. Boil the potatoes in salted water for 10-15 minutes or until soft.
2. Run under a cold tap to cool or drain and leave to cool.
3. In a mixing bowl place all the other ingredients and stir until the sugar is dissolved and no longer feels gritty.
4. Fold in the potatoes and serve as a side dish with a salad or with some warm chicken and curried roast veg.
