650g Lamb or Beef 4 Onions (medium) 3 Garlic Cloves 1' piece Ginger 6 tbsp Natural Yogurt 200ml Tomatoes (tinned) 1 tsp Lemon Juice 6 tbsp Cooking Oil 2 tsp Salt 1 tsp Sugar Fresh Coriander (for garnish - optional)
Preparation
1. Peel and finely chop the onions, garlic, ginger and coriander.
2. Cut the lamb into bite-size pieces and mix with the contents of the marinade Sachet, 1 tsp salt and half the garlic and ginger.
3. Leave to marinate for 30 mins or more.
4. Blend the tomatoes.
Cooking the curry
1. Heat the oil in a large saucepan over medium heat. Add contents of Sachet 1 and fry the seeds for a few seconds before adding the onions.
2. When the onion is nicely browned, add the garlic and ginger and after a few seconds add the lamb.
3. Stir well to coat the meat and cook with a lid on for 20 mins, stirring occasionally.
4. Now add the tomatoes, yogurt, contents of Sachet 2, 1 tsp salt, sugar and lemon juice. Stir.
5. After 2 mins, add 300ml of boiling water and gently simmer for 40 mins until the meat is tender.
6. Once cooked, check the seasoning and serve with fresh coriander.
Serve with... This aromatic dish, brought to India by the Moghuls, goes really well with Pilau Rice, Naan Bread and Raita. 'Josh' means hot or passionate... we've only added the heat, honest!) |
