Spice Tailor's light, gently spiced Classic Tarka Daal is a much loved staple of North Indian home cooking. It is proper soul food and so delicious; mum would be proud.

It is typical in that it uses yellow mung lentils for creaminess and a buttery flavour and channa daal (Bengal Gram) for nuttiness and texture. The tarka is split in two, with a cooked onion, tomato, ginger and garlic sauce and then the typical whole cumin seeds and whole red chilli. For that extra special flavour, cook in a little ghee or butter instead of oil.

Pulses are the cornerstone of Indian food and no one makes them better. Our Tarka daal is light, subtle, creamy and immensely satisfying. Perfect for scooping up with hot morsels of flame-baked naans. We've done all the soaking, cooking and spicing for you so it can be on your table in just 5 minutes. Aanjum x

This is an everyday curry, it would go to work in a tiffin or be served with dinner for many North Indians. It is normally served with Indian flatbreads, a vegetable side and ideally a raita too.
It's so Simple!

• Heat 1-2 tbsp oil or ghee in a small non-stick saucepan, add the whole spices and cook for 20 seconds.

• Remove from heat and add the prepared tarka (small brown pouch) and bring to a boil.

• Add the lentils and a small splash of water, bring to a simmer and serve.

• Serve with garlic naans and some yogurt for a quick and delicious meal...

To Tailor To Taste

• Finish with a handful of fresh chopped coriander and a knob of butter.

• For added flavour, add 1-2 pierced green finger chillies and some julienned ginger after the spices.

• Add a large handful of spinach into the lentils for a one pot dish.
