Spice Tailor's Punjabi Channa Masala Daal is hearty, nutty, spicy and really flavourful. It is a classic blend of North Indian flavours with the delicious and distinct addition of dried powdered pomegranate seeds. These are different from the fruits we eat and have a delicious fruity tang to them...

Channa means chickpea and masala means spiced. The simplicity of name fits the humble chickpea curry. Chickpeas might have a boring reputation but their mealy nuttiness works so well with Indian flavourings ensuring that this dish is loved around the country. Probably the most popular of these is the Amritsari chickpea curry. Here this curry is paired with a local flatbread known as kulcha, a stuffed tandoor-baked bread and is eaten almost any time of the day.

Daal is a staple of any Indian home. It's our soul food and superfood rolled in to one - comforting but packed with nutrients, fresh flavours and delicious spices. But a good daal takes time to soak, spice and cook, and we don't all have the time. So we 've done the work for you so you can simply heat up and devour in minutes. Anjum x

Made with chickpeas, caramelised onions, ginger, tomatoes, tangy pomegranate seeds and herbs and spices, this hearty vegetarian curry is perfect on its own with piping hot naan or as part of a larger feast.
It's so Simple!

• Heat 1-2 tbsp oil or ghee in a small non-stick saucepan, add the whole spices and cook for 20 seconds or so until sizzling.

• Remove from heat and add the prepared tarka (small brown pouch) and bring to a simmer.

• Add the chickpeas and a small splash of water, bring to a simmer and serve.

• Serve as a main course or as a side...

To Tailor To Taste

• For a real Punjabi flavour, finish with a knob of butter, fine slices of red onions and fresh coriander.

• Stir in some baby spinach.

• Top with some fried julienne-cut ginger.

• Saute some mushrooms in the hot oil before adding the tarka sauce and chickpeas.

• Take inspiration from the street and serve with hash browns or potato cakes and top with finely chopped red onions and a wedge of lemon.
