The North Indian province of Punjab, named after the five rivers flowing through it, is a fertile region full of wonderful, seasonal vegetables and a good variety of grains. Its people live large and this is reflected in everything they do. Their food is rustic and robust with the hearty flavours of onions, ginger, garlic, tomatoes and warming spices.

Spice Tailor's Punjabi Tomato Curry has been adapted from her mother's cherished chicken curry recipe, reflecting Punjab's gutsy flavours. This version has extra onions, for a sweeter thicker base and more tomatoes for a beautifully balanced taste. But don't just stick to chicken, this sauce can form the base of so many different dishes so be adventureous with your choice of ingredients.

The Spice Tailor range is truly versatile. Simply take your pick from the bits to buy, add the specially selected spices, stir in the sauce and you have a fresh, authentic Indian meal in just 10 minutes. Anjum x
It's so Simple!

Bits to Buy:

• 275g skinned chicken fillets (or lamb rump, pork, duck, fish, prawns or paneer), cut into generous pieces

From your Cupboard:

• 1 tsp vegetable or olive oil


• Heat 1 tbs oil in a pan, add the spices and cook for 20 seconds.

• Add the meat, vegetables or paneer (if using meat, brown lightly) before adding the base sauce. Coat well then simmer for 2 minutes.

• Stir in the main sauce, fish if using, and simmer until ingredients are cooked through.

• Serves 2-3 with rice, naan or rotis...

To Tailor To Taste:

• Also great with chickpeas or hard-boiled eggs.

• Use whole skinned chicken joints for a fuller flavour or add good chicken stock and cook for 20-30 minutes.

• If time permits, marinade the chicken in the base sauce for an hour to allow the flavours to develop.

• For extra richness, finish with a little cream or cashew nut paste.

• Finish with a handful of fresh, chopped coriander.
