Rogan Josh originates from Kashmir, where it was traditionally made simply with oil, spices, yoghurt and very fresh lamb. The dish seen in most restaurants and takeaways in this country is closer in style to a deep, hearty lamb curry from the Punjab and this is the inspiration for Anjum's Rustic Rogan Josh. What this version does share with the original is its distinctive blend of spices and depth of flavour.

Spice Tailor's Rustic Rogan Josh Curry blends caralised onions, ginger, garlic, fresh tomatoes and garam masala in a rich, savoury sauce. Its the ultimate lamb curry! If you are not in a hurry to eat, opt for leg or shoulder of lamb, cut into cubes, and slow-cook over a low heat. The difference in the depth of flavour is worth the wait and the meal will be cheaper. If you don't have time, adding a little stock as you cook your curry will introduce a richer lamb flavour.

It's so Simple!

Bits to Buy:

• 275g lamb rump or neck or chops or duck (beef or lamb leg , shoulder or mince will take longer), cut into generous pieces

From your Cupboard:

• 1 tsp vegetable or olive oil

Preparation:

• Heat 1 tbs oil in a pan, add the spices and cook for 20 seconds.

• Add the meat, brown lightly, and add the base sauce. Coat well then simmer for 2 minutes.

• Stir in the main sauce, and simmer until ingredients are cooked through.

• Serves 2-3 with rice, naan or rotis...

To Tailor To Taste:

• Cook vegetables along with the meat - try aubergine, spinach, peas, or potatoes.

• Fry pierced whole green chillies or julienned ginger in the oil before you add the base sauce, for extra zing abd flavour.

• For an elegant meal, cook 2 lamb shanks and finish with a little cream.

• Add extra water if slow-cooking.

• Finish with a handful of fresh, chopped coriander.
