Tomato Curry is a side dish with a twist. Currys are generally cooked and then spiced. But here the spices are mixed with the raw Tomatoes and then cooked which gives a distinct flavour. Why not try giving a zesty flavour to your boiled egg as well.

Ingredients:

Tomatoes chopped or canned Tomatoes - 5 to 6
 
 Ginger grated - 1 tsp
 
 Garlic grated - 1 tsp
 
 Chilli Powder - 1 tsp
 
 Salt - 1 tsp
 
 Coriander Powder - ½ tsp
 
 Cumin Powder - ½ tsp
 
 Oil - 4 Tbsp
 
 Onion Seeds - ½ tsp
 
 Mustard Seeds - ½ tsp
 
 Fenugreek Seeds - ½ tsp
 
 Cumin Seeds - ¼ tsp
 
 Dried Red Chillies - 3
 
 Lemon Juice for garnishing
 
 Coriander Leaves / Cilantro chopped for garnishing
 
 Eggs hard boiled - 3
 

Method:

• Place the Tomatoes in a large mixing bowl. To this add the Ginger, Garlic, Chilli Powder, Salt, Coriander Powder and Cumin Powder. Mix well and set aside.

• Heat Oil in a pan, add the Onion Seeds, Mustard, Fenugreek, Cumin Seeds and Red Chillies. Stir fry for about a minute until it gives out a nice aroma.

• Next add the Tomato mixture to this Oil mixture and stir fry for about 2-3 minutes.

• Then add Salt, cover and cook on low heat for about 10 minutes.

• Sprinkle the Lemon juice.

• Garnish with Coriander Leaves / Cilantro and serve hot with the boiled Egg.
