Vegetarian Noodles recipe is perfect for those who like light meal without meat. It's easy to prepare steps and express cook makes it even more suitable for a week day meal. Vegetarians can use Rice Noodles instead of Egg Noodles - this dish is a delicious alternative to Rice and Pasta. Choice of the Vegetables and Spices can also vary according to ones liking - there's no strict rules to be followed here. Try this low fat food, you'll luv it!!

Ingredients:

Fine egg noodles - 2 nests
 
 Green Chillies/Chilli Sauce - 1 (if Sauce, 1 tsp) 
 Ginger grated - 1 tsp 
 Shallots sliced - 2
 
 Peppers sliced - 1 or 1 cup
 
 Carrots sliced - 2 or 1 cup
 
 Soya Sauce - 2 tsp
 
 Oil - 2 tbsp
 

Method:

• Plunge the Noodles into a large pan of boiling Water. Simmer for 3 minutes and cook. Once done, for best results rinse in cold Water, drain and let it cool.

• Heat Oil in a wok, add Chillies, Ginger and sauté Shallots. Next stir fry Peppers and Sarrots, add Salt and Soya Sauce.

• Add the prepared Noodles to the stir fry and mix well and serve.
