Yellow Thai Curry is a speciality of Thai Cuisine. Generally Thai cooking involves Coconut milk or cream which makes the gravy rich and creamier. This curry is made by boiling mixed veggies in Coconut milk and of course the Thai Curry paste. So if you are a big fan of Coco milk why not give it a try? |

Ingredients: | Vegetable Stock - 1 Cup

| Coconut Milk - 1 Cup

| Onions or Shallots chopped - ¼ Cup

| Few Bamboo shoots
| |
| Potatoes cooked and cubed - 1
| |
| Broccoli cut into florets - 1 Cup
| |
| Cauliflower cut into florets - ½ Cup

| Baby corn cut lengthwise - 2 to 3
| |
| Okra cut lengthwise - 2 to 3 (Optional)
| |
| Fresh Ginger grated - 1 Tbsp
| |
| Sugar - 1 tsp
| |
| Garlic grated - 1 Tbsp
| |
| Turmeric Powder - ½ tsp
| |
| Curry Powder - 2 tsp
| |
| Chilli sauce - 3 Tbsp
| |
| Salt to taste

Method: | • Place the Vegetable Stock and Coconut Milk in a Pan on medium flame.
• Once this starts boiling, add the Vegetables and mix well. Keep this on low flame till the Vegetables are cooked.
• Then add the remaining ingredients and further cook for another 5 minutes.
• Serve hot with Rice.
You can also make this Curry with Chicken, Duck, Shrimp etc. |
